There is a particular silence that belongs only to places that have absorbed centuries of it. You feel it the moment you pass through the gate at Eremo della Giubiliana — thick white stone walls, the scent of carob trees, a tower rising above the Hyblean plateau that once watched for Barbary raiders coming in from the sea. They never quite left, those layers of history. They're in the floors, in the vaulted ceilings, in the 17th-century painting of the Virgin Mary that has hung in the same spot longer than anyone can remember.


Rooms

The suites are monastic cells transformed — but not sanitized. Stone floors, cross vaults with original capitals, exposed beams, period furniture sourced from the Nifosì family who have owned and operated this place for generations. Each one is different; none of them feel like a hotel room. The Suite with Terrace is the one to book — a full 360° view of the plateau, the carob forest, and on clear days, the coast of Malta dissolving into the Mediterranean horizon. Some suites have hot tubs. All have the particular stillness that money usually can't manufacture.


Food & Drink

Dinner at the restaurant Don Eusebio is rooted entirely in the Ibleo territory — the olive oil, the vegetables, the meat, the wine. The cellar occupies an old crypt. Breakfast is serious and abundant. Cooking classes are available for guests who want to understand what they've been eating.


The Experience

What separates the Eremo from every other beautiful stone property in Sicily is what surrounds it. Walking the park, you pass a Bronze Age necropolis — tombs carved directly into the rock, third century BC — coexisting quietly with the garden and the pool. The property has its own private airstrip; guests arriving by private plane land directly on site. Land Rover excursions into the Val di Noto UNESCO sites depart from here. Ragusa Ibla, Noto, Modica, and Scicli are all within reach. You can, if the mood takes you, fly to Malta and back in a single afternoon.


Worth Knowing

This is a rural property — embraced by countryside, not walking distance to anything. That is entirely the point. The bathroom finishes in some rooms have drawn mixed reviews and may not match the drama of the architecture itself. The staff, by near-universal consensus, are exceptional — warm, knowledgeable, and genuinely invested in the experience of every guest.
